Pumpkin Apple Oatmeal

I found a recipe for pumpkin oatmeal on Pinterest the a few weeks ago and decided to give it a whirl.  The crowd wasn't too impressed.  So, of course some tweaking was in order.  With the exception of a few of the littler kiddos not liking the chunks of apples this got a round of applause.  Enjoy!

Pumpkin Apple Oatmeal

4 medium apples peeled and chopped
4 T. butter
4 T. brown sugar
1/2 tsp. cinnamon

4 c. old-fashioned oatmeal (you can use quick cooking, but it will be a bit mushy)
3/4 c. brown sugar
1 tsp. salt
2 tsp. cinnamon
dash ground cloves
dash ground nutmeg

3/4 c. pumpkin puree
1/4 c. honey
1 1/4 c. milk
2 tsp. vanilla

In a skillet melt butter and stir in brown sugar, apples and cinnamon.  Cook about 3-4 minutes.  In a mixing bowl stir in oatmeal, brown sugar, salt, cinnamon, cloves, and nutmeg.  In a separate mixing bowl whisk together pumpkin, honey, milk, and vanilla; stir in to dry mixture.  Place apple and butter mixture in a greased 2 quart baking dish.  Pour oatmeal mixture over and bake in a 350 degree oven for 35 - 40 minutes.

My kiddos enjoyed this with a bit of milk poured over top.  Enjoy!
