Hey all!
When have I not hopped on here to post that life is crazy? Well guess what? Yep. Still crazy!
We've finished up school, hubby's out of school now, kiddos are getting 4-H projects finished up for next month and for the last month I've felt pretty cruddy. I'm on the upswing, but our oldest daughter is in the operating room as we speak.
Our Rebekah has had
scoliosis since she was 5. She's 14 1/2. Kiddos usually get scoliosis when they are around the age of 11 or so. She's worn a back brace since she was 5, too. She's stopped growing (at a beautiful 6 feet tall!) and can now have the corrective surgery needed to straighten her spine and keep her lungs and heart healthy...and no more back braces! Her amazing team of doctors, nurses, and staff are all taking care of her right now. She went back a few hours ago and we have at least three more hours to wait. Prayers would be appreciated right now!
So...while I wait (and lean on the Lord for patience and peace) I thought I might as well get this cookbook review done that I was supposed to do two weeks ago when I was sicker than a dog. (Sorry Gooseberry Patch! They are so forgiving! Love them!)
So Gooseberry Patch came out with a Garfield cookbook! For real! I grew up on Garfield! I had Garfield stickers, paper, stuffed animals, etc., etc.. This cookbook is full of all sorts of fun Garfield drawings, comics, and of course some recipes that would definitely be Garfield approved!
The great folks at Gooseberry Patch were kind enough to give me a cookbook to giveaway to one of you lucky readers!
Here's the recipe my Rebekah chose and made for the kiddos! (Read down yonder for the giveaway details!)
Pumpkin Flapjacks
1 c. all-purpose flour
2 T. dark brown sugar, packed
2 t. baking powder
1 t. pumpkin pie spice
1 c. canned pumpkin
1 c. milk
2 eggs, separated
1/3 cup oil
Garnish: butter/ maple syrup
In a large bowl, combine flour, brown sugar, baking powder and spice; stir well and set aside. In a separate bowl, blend together pumpkin, milk and egg yolks. Add pumpkin mixture to flour mixture; stir until smooth. In a deep bowl, beat egg whites with an electric mixer on high speed until stiff peaks form. Gently fold egg whites into pumpkin mixture. Ladle batter by 1/3 cupfuls onto a hot greased griddle over medium heat. Cook pancakes until bubbly on top and edges are slightly dry; turn and cook on other side. Serve warm with butter and syrup. Makes about one dozen.
Note: We weren't sure if the oil listed was meant for the griddle or the recipe. They tasted much better in the recipe. Just FYI. *giggle*
