Breakfast Casserole and Gooseberry Patch Giveaway!

The kind folks at Gooseberry Patch have blessed us once again with a giveaway!  Details on the giveaway in a minute, but first I want to share this yummy recipe!  (My notes on how I tweaked it are after.)




Company Breakfast Casserole

1/2 lb. bacon
1/2 c. onion, chopped
1 doz. eggs, beaten
1 c. milk
16 oz. pkg. frozen shredded hashbrowns, thawed
1-1/2 c. shredded sharp cheddar
1 t. salt
1/2 t. pepper

In a skillet over medium heat, cook bacon until crisp.  Crumble and set aside, reserving 2 tablespoons drippings.  Saute onion in reserved drippings until tender; set aside.  In a bowl, beat eggs and milk;  stir in onion, bacon and remaining ingredients.  Pour into a greased 13" x 9" baking pan.  Bake, uncovered, at 350 degrees for 40 to 45 minutes, until a knife inserted near the middle comes out clean.  Serves 6.


*Notes*  I used about 1 cup of chopped ham leftovers instead of bacon.  I used about 1/2 tsp. onion powder instead of onion.  I used half dozen eggs instead of 1 dozen.  I used mild shredded cheddar instead of sharp.  This fed our family of 10 eaters.  My mom, who is gluten free, enjoyed it!

Carmen, are there shredded hashbrown potatoes in the breakfast casserole? The photo sure looks like it but they aren't listed in the ingredients or directions. Anyway, my husband and I love casseroles and our favorite is probably one we call Pizza Spaghetti Lasagna. It has pizza toppings (we do pepperoni, olives, and mushrooms), spaghetti, and is baked like a lasagna. Silly name but yummy casserole! My favorite casserole of all time was one that my mother used to make called Beef Smetana. It was a savory blend of ground beef, egg noodles, sour cream, cottage cheese, a touch of tomato paste or sauce, green onions, etc. My mother isn't around anymore and I never got the recipe from her. :( Despite my attempts to find this recipe online, I have failed. One bite of that casserole and I would be transported back to a simpler time. :) My quest continues . . .

I can't wait to try this one! Love that it has no bread and no "cream of ______"soup making it more nutritious. I would use turkey bacon and add some spinach and maybe other veggies. My favorite casserole would have to be my childhood favorite

My fave casserole is made with califlower, bacon, mayo and pretty much any veggie you want to throw in. (I tell myself that the veggies cancel out any unhealthiness from the bacon & mayo) Always yummy.

We love my egg casserole. Its so easy. Just fry some sausage drain and set aside. Scramble some eggs. Mix eggs and sausage, cheese, sour cream together. Set over night if you want or need. Top with Cheese Bake 350 for 20 min or until cheese is melted. Yummy!!!!!

My favorite casserole is Sour Cream Noodle Bake from Miss Hullings cafeteria that was here in St Louis,Mo. They have long since closed but I do have there cookbook also no longer in print. Lot's of GOOD memories from there of food & friends.

that an old boyfriend's mom used to make. It has Cheese Whiz, Minute Rice, lots of butter, chopped onion and frozen chopped Broccoli. Not low-cal but a great one for Christmas or Thanksgiving dinner.

I love casseroles they are a great way to feed a group with one dish and often cheaply. My favorite casserole is a toss up, because I have several I make a lot. One of our faves at home is Tuna rice casserole. I make it with extra mushrooms, garlic, onion, parsley and sometime parmesan.
